New Baby Buds & Chocolate cake!

Happy Monday mornin' to ya!

Hope you had a fabulous weekend, whether you celebrated Mother's Day or not in your region!

Aren't they sweet?  The Irving Berlin song, Sisters, sisters kept running through my mind as I was making this card.  We watch White Christmas every year, love it!!!

Life has been super busy!  Son #2 is graduating this coming weekend and we're trying to finish up reports & paperwork!  There is just not enough time in the day!  lol  I know I'm preaching to the choir here!

Though, no matter how busy it gets, the children still expect to be fed, so we must press on.   Here's a quick chocolate cake recipe for the microwave!   It makes a nice dessert for suppertime!

Microwave Chocolate Cake
serves 8

1/4 cup Hershey's cocoa
2/3 cup hot water, divided
3/4 cup plus 2 tablespoons all-purpose flour
  1  cup sugar
1/2  teaspoon baking soda
1/4  teaspoon baking powder
1/4  teaspoon salt
1/4  cup plus 2 Tablespoons of vegetable oil
   1  egg
   2  teaspoons of vanilla extract

  1. Grease round micro-proof baking dish, 7 1/4 x 2 1/4 inches or 8 x 1 1/2 inches; line bottom with plastic wrap.  
  2. In small micro-proof bowl combine cocoa and 1/3 cup water; microwave on high (full power) 40 to 50 seconds or until slightly thickened.  
  3. In medium bowl combine flour, sugar, baking soda, baking powder and salt.  
  4. Add oil, remaining 1/3 cup hot water, egg, vanilla and chocolate mixture; beat until batter is smooth and well blended.  
  5. Pour batter into prepared pan.  
  6. Microwave on high 5 to 6 minutes* without turning until cake begins to pull away from sides (some moist spots may remain but will disappear on standing). 
  7. Let stand 5 minutes invert onto serving plate. 
  8. Peel off plastic wrap; cool.  

*Time is for 600-700 watt microwave oven

This is a very easy recipe!!!  

Serving suggestions....dust with powdered sugar, drizzle w/chocolate syrup & serve with ice cream, frost with your favorite icing...we use our homemade peanut butter frosting when time permits!

***side note for those homeschooling moms wanting to teach your child how to make a simple cake.... work side by side mixing ingredients.  Microwave cakes separately and you'll have two cakes for two separate nights or combine for a two layer cake!
