No eggs on Baking Day?! eek!

Jessica @ Baking Up Crafts has gathered a group of us together for a fun Baking Blog Hop!  Pop over to her blog for all the fun details!   It's a short & 'sweet' hop, so I hope you'll play along!


Today I would like to share:

  1. a quickie cookie recipe
  2. a recipe pocket card
  3. no-egg tip!



Refreshing Lemon Cookies...



Lemon Cookies...you can make a fast batch of cookies (3+ dozen) from any boxed cake mix.  Just add 1/2 cup of oil, 2 eggs, 1 tablespoon water and 1 to 2 teaspoons of lemon extract to the dry mix.  Mix well with electric mixer, roll into 1 inch balls, flatten onto an ungreased cookie sheet and bake for 8-10 minutes @ 350 degrees F.   Dust with powdered sugar.  (The kids were dropping them into the sugar & fishing them out! lol too fun!)

Recipe pocket card...I saw this design over on Ashley Newell's blog, I just loved everything about it & thought it was perfect for today's hop.  Her card is so beautiful, elegant too, see it here!
Stamps: Clear Dollar Stamps (recipe for love) fundraiser set
Papers: Echo Park dp
Others: vintage lace, Offray gingham ribbon, glassine bag,
pinking shears, button/baker's twine.

My glassine bag actually tucks down behind my ribbon & patterned paper, for a longer recipe card.

I've been wanting to share this recipe for some time.  So often we need a quick treat, either for guests, gifts or a fundraiser your beloved child forgot to tell you about that morning.  This easy recipe has come to my aid more than a few times.  Now, imagine feeling confident that you can provide this cookie treat in under an hour...only to find out you're short on eggs!!!  eek!   No problem!  Simply substitute 3 tablespoons of Mayonnaise for one egg!  Works perfectly, tastes delicious!

Hi Maria,

your cookies look delicious, I am going to save that simple recipe, I love everything lemon! Who would have thought mayo would be a substitute for cookies! Won't be doing that one though, I am not even allowed too have mayo in the house because of hubby who cannot stand even the thought of mayo.

Your card is beautiful, love those colors that you used and the lace brings it all so beautifully together!

Thanks for sharing your recipe. I actually gave it a try this afternoon. I wanted to ask you--do you usually use yellow cake mix or lemon? (I used yellow and think they turned out fine.) I plan on taking these to a coworker who lost her brother recently. Hopefully they will brighten her day.
