Oatmeal Raisin Cookies for Easter???


...Oatmeal raisin cookies are for Easter, if they are your very favorite cookie!

If you're like me, you are constantly listening for 'giving' opportunities to arise!  Like when a lovely friend mentions that some Oatmeal cookies is all that is needed to make them happy....and no one EVER makes any for them!  lol   so there ya go!

This gift is in the early stages....

  1. find box in 'containers for giving' stash.  check!
  2. shred Easter colored tissue paper (I love shredding things!) check!
  3. bake cookies  check!
  4. remember to take a 'before' picture of the box   check!
 Next week, I'll show you how I decorate the box.   You didn't think I was going to leave it 'naked', did you?

Best Oatmeal Cookies Ever!   (Don't you love that name?  but they really are!)

Preheat oven to 350 degrees.

Whisk together & set aside...

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt

Now combine the following with a HAND-MIXER on low.

  • 1 cup unsalted butter, softened
  • 1 cup dark brown sugar, firmly packed
  • 1 cup sugar
  • 2 large eggs
  • 2 teaspoons vanilla
slowly increase the mixer speed to high, beat until fluffy.  The color will lighten.

Stir the flour mixture into the creamed mixture, until flour is no longer visible.

Then stir in

  • 3 cups oats (not instant)
  • 1  1/2 cups raisins
Spoon cookies on a baking sheet, keeping uniform in size (as much as possible).

Place 2 inches apart.   Spray with non-stick spray.  ( I use parchment paper)

Bake 11-13 minutes until golden.

Remove from oven BUT let them sit for 2 minutes before moving them to a cooling

I had copied this recipe from a magazine forever ago.  If you stay true to the details in this recipe, you'll throw out all your other oatmeal cookie recipes!  lol

Yum! (-: Thanks for sharing this! Oatmeal cookies are one of my very faves, but Im the only one that eats them here, lol. So I rarely get the chance to indulge but this is just too sweet - gorgeous packing and I'm sure it's made with lotsa love! TFS! (Btw, I love your flower mouse pointer - the cuteeeeeest!)

Ooooh Maria these sound yummy! I would LOVE to try them... maybe when the kids come! I can't keep sweet things in the house if it's just hubby and me... we eat them and we shouldn't! LOL! This was a great idea! Thanks for letting me know about Inspire me Fridays!
